However, it was in the late 1980s that chef Santiago Rivera Jiménez introduced this unique cheesecake to the world. Unlike traditional cheesecakes, this dessert is crustless and baked at a high temperature, resulting in a beautifully caramelized top and a creamy, custard-like center.The cheesecake gained popularity as food tourism in the Basque Country blossomed, and social media helped spread its fame globally. Today, it’s celebrated not only for its rich flavor but also for its striking appearance, often described as "ugly but beautiful." Recipe for Tarta de Queso La Viña

    • 1 cup (200g) granulated sugar

    • 1 cup (240ml) heavy cream

    • 1/4 cup (30g) all-purpose flour
